Red velvet cake is a traditional red, mahogany or crimson chocolate layered cake. It is also layered with white cream cheese or whipped cream icing. Ingredients
  

  • 2 1/2  cups all-purpose flour
  • 1 1/3  cups granulated sugar
  • 2  tablespoons unsweetened cocoa powder
  • 1  teaspoon baking soda
  • 1  teaspoon kosher salt
  • 1 1/2  cups buttermilk*
  • 1  cup oil
  • 2  large egg whites
  • 1  tablespoon  red food coloring
  • 1  teaspoon  white vinegar
  • 1  teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 degrees F, mist two 8-inch diameter cake pans** with non-stick spray, and sprinkling with 1 tablespoon sifted cocoa powder, tapping pans to coat and discarding extra cocoa.
  • Place the flour, sugar, cocoa, baking soda, and salt in a large bowl and whisk to combine.
  • Place the buttermilk, oil, egg whites, food coloring, vinegar, and vanilla in a large measuring cup, and stir together.
  • Pour the liquid ingredients into the dry and stir together until smooth (2 minutes).
  • Divide the batter equally between the two prepared pans.
  • Bake for 30 to 35 minutes, or until a toothpick inserted in the thickest part of the cake comes out clean or with a few moist crumbs.
  • Cool completely, then fill and frost with whipping cream or cream cheese frosting.I used whipping cream frosting as i love the light and sweet flavour it carries.
  • To assemble, remove 1 cake from its pan and place flat side down on a serving platter. Drop about 1 cup of icing onto cake and, using a flat spatula, spread evenly over top. Remove the second cake from its pan. Place flat side down on top of the first layer. Use remaining frosting to cover top and sides of cake.
  • You can also top up with chocolate ganache and strawberries to decorate

Notes

This layer cake can also be baked in two 8-inch or 9-inch diameter cake pans. The cake layers may bake up slightly thinner, and the bake times may need to be adjusted.

 you can make buttermilk at home by stirring 1 1/2 tablespoons of lemon juice or white vinegar into 1 1/2 cups of regular milk. Allow the mixture to stand for 5 minutes, or until thickened and slightly curdled.
