Samo rice is a popular variant of millet used while fasting. It is popularly known as Samvat ke chawal, Barnyard millet or samak rice. This recipe is delicious, easy to make and filling.This can be a great breakfast or an evening snack.

Ingredients
  

  • 1/2 cup samo rice samak ke chawal
  • 1 tsp Rock salt sendha namak
  • 1 tsp oil

For Filling

  • 1 medium boiled potato
  • 1 Green Chilli
  • Cilantro chopped
  • 1 tsp Cumin Powder jeera powder
  • 1 tsp Black Pepper Powder
  • 1 tsp Rock salt Sendha namak (as per taste)
  • oil for frying

Instructions
 

  • Soak samo rice for about 2 hrs.
  • Drain and Grind soaked rice with just 1 tsp of water
  • Add it to a heated non stick pan on low flame
  • Let it dry and crumble like flour approximately 1-2 min
  • Pour this in separate bowl to cool down
  • Add rock salt ,1 tsp oil n 1 tsp water (if required) to knead a soft dough.
  • Keep aside
  • Mix all the filling ingredients to make stuffing.
  • Place 1 tsp of stuffing, lift the edges of the dough and join it at the center, closing the stuffing. Again flatten it slightly by pressing it between the palms. Place it on a plate and similarly, stuff the rest of the kachoris
  • Heat enough oil in a wok to deep fry the kachoris and gently slide as many kachoris as possible into the wok. When fried from beneath, flip their sides and continue frying until they turn golden brown in color, evenly. Lift up the fried kachoris with the slotted ladle and transfer them on kitchen paper towel.
  • Lip smacking Samo rice kachoris are now done and ready.
  • Serve these crispy samo rice kachoris steaming hot along with curd and dates chutney potato curry for fast and Enjoy!
