Zucchini and Paneer Fritters
These guilt free zucchini paneer fritters are little spicy, crispy out side and soft inside. These air fried/ shallow fried fritters are very easy and quick to make.

Ingredients
- 2 Medium Zucchini shredded
- 2 Cups grated Paneer
- 2 tbsp lupin flour (see substitutes in notes)
- 8 Mint leaves finely chopped
- ½ Jalapeno pepper or 1 Green chilli finely chopped
- 1 Tsp crushed red pepper
- ¼ Tsp oregano
- Salt to taste
- Black pepper to taste
- 1 Tsp lime juice
Instructions
- Take shredded zucchini in a strainer and sprinkle some salt over it and mix. Now let it stand for 5 minutes. After 5 minutes squeeze as much water as you can from shredded zucchini and set aside.
- In a mixing bowl take grated paneer, lupin flour and zucchini, combine well. Now add all the spices and mix well.
- Take equal portion from this mixture and shape into ball shaped fritters you can make any shape of your choice like flatted tikkis too. Cook these fritters in air fryer at 400° F for 10-12 minutes or until golden brown. Here you will need to follow your air fryer manual and cook accordingly.
- Or if you do not have air fryer, shallow fry these fritters in non-stick pan with little oil until both sides are golden brown.
- Serve immediately with yogurt, ketchup or Green chutney.
Notes
- I used air fryer with zero oil ,you can shallow fry these in pan too.
- I used lupin flour you can add any binding agent like bread crumbs or besan or rice flour too.
