Instructions

  • To prepare the dough, first activate the dry yeast by mixing it with sugar and lukewarm water. Mix it well and leave it aside for some time. Now, in a large bowl, add all purpose flour along with wheat flour, activated yeast, milk, vegetable oil, sugar and salt. Mix it well and knead it in the form of a soft dough. The dough should not be too soft or too hard. Cover it with a wet kitchen towel and set it aside.
  • Now, on a chopping board, chop the onions and garlic finely. Meanwhile, place a pan over medium flame and add oil in it. When the oil is hot enough, add garlic ,green chilies and chopped onions in it. Saute these until they become translucent. Now, add the minced chicken in it. Mix it well so that the onion and garlic are incorporated in the chicken. Sprinkle salt, black pepper, red chilli powder, cumin powder and garam masala powder ,cardamom powder over it and mix it well. Make sure that chicken is evenly coated with the spices.
  • Once the chicken is cooked, take it off the flame and transfer it in bowl. Let it cool down. Now, check the dough. It must have doubled in volume. Dust a flat surface with some flour and transfer the dough over it. Knead it for a minute and divide it into small portions. Now, using a rolling pin, roll out these portions thickly in the shape of a disc. Stuff each rolled out disc with the lamb mixture and make a stuffed ball. Now, again roll the stuffed balls out to a thick naan .Poke the naan on top using back side of ladle.
  • Place a non-stick pan over medium flame. Once hot, transfer the rolled out naan over it and let it cook. Cook one side until it turns golden brown in color. brush yogurt on top toss into oven (broil on top rack 250 degree Celsius) ,untill beautifully charred .It will take 2-3 minutes.
