Samo Rice or samak ke chawal is a variety of millet used during fasting as it is very filling and easy to digest.

Ingredients
  

  • 1 cup samo rice
  • 3 cups water
  • 2 medium sized potatoes peeled and diced into small pieces
  • 1 tomato chopped
  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds zeera
  • 1 number green chilli finely chopped
  • 1 small bunch coriander leaves/cilantro finely chopped.
  • Sendha namak rock salt

Instructions
 

  • Wash samak ke chawal. Soak in a small amount of water. Meanwhile heat ghee in a pan or kadhai. Fry cashew nuts till golden brown(optional). IOn taking cashews add cumin seeds in the same ghee. When cumin starts to splutter, add all the dry spices. Then add chopped green chillies, then diced potatoes. Fry potatoes for two-three minutes.Add tomato, Add rock salt to taste. Cook potatoes and tomatoes covered on low flame for two minutes.
  • Open the lid. Add soaked samak ke chawal. Fry for a minutes. Then add three cups water and adjust salt. Also, add half of the fried cashew nuts. Cook covered for five -seven minutes on medium flame.
  • Open the lid after five minutes. The samak would have absorbed most of the water. Do not dry too much as samak will absorb more water gradually, and may become too dry. Decorate with fried cashews. Also, add chopped coriander leaves/cilantro. serve hot.
