Spinach and cottage cheese sandwich

Are you tired of your boring veggie sandwich, wanna try something new with spinach and cottage cheese .You can have this sandwich as a tea-time snack as it goes really well when paired with a hot tea/coffee. so what are we waiting for lets begin cooking this delicious sandwich recipe and indulge in the goodness of healthy veggies.

Ingredients
  

  • 4 Bread slices
  • 2 cups Spinach chopped
  • 2 tbsp Butter
  • 1 tsp Olive oil
  • 100 gms Cottage cheese
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 tsp Roasted cumin powder
  • 1 tsp Lemon juice

Instructions
 

  • Wash spinach properly & keep it in a strainer to drain out excess water.
  • Now chop spinach finely.
  • Heat 1 tsp of olive oil in a pan. Add chopped spinach and cook till all the water dries up.
  • Crumble paneer and add it to a cooked spinach. Add Salt, Pepper and mix well. Turn off the flame, Add cumin powder, lemon juice & mix well. The stuffing is ready.
  • Coat the inner layers of 2 bread slices with butter. Spread the stuffing on 1 bread slice evenly. Now place the other bread slice over it and press it lightly. Brush little butter on top as well. Similarly, prepare the other sandwiches as well.
  • Place the sandwiches in a griller & grill it for 3-4 minutes. Or you can roast it over your hot griddle from both sides. Cut into triangles & serve hot with dips of your choice.

Notes

  • Always use a little less salt when using spinach as it has its own salt.

  • You can also try adding sweet corn in this recipe tastes good.

  • If you want to try non vegetarian version try using grilled shredded chicken instead of cottage cheese
