This potato curry is a generic one and you can tweak it easily to suit your taste buds. I usually make this in instant pot and it requires no pre boiled potatoes or any onion & garlic.so lets just get straight to the recipe......
Heat oil in an Instant pot/pressure cooker; add mustard seeds and let them splutter. Add cumin seeds and saute till they begin to change color. Add asafoetida, fenugreek seeds ,turmeric powder and salt. Mix well and saute for few seconds.
Add chilli powder and coriander powder and cumin powder. Mix well and sauté for few seconds.
Add potatoes and ¾ cup water. Mix well and bring to a boil. Cover the cooker with the lid and cook under pressure till pressure is released 3 times.,instant pot pressure cook high 5 minutes.
Open the lid of the cooker after the pressure reduces completely, sprinkle coriander leaves and garam masala powder.
