Oats Veggie Pancake

Oats are a nutrient-rich food associated with lower blood cholesterol when consumed regularly. I like to use them to make delicious Indian breakfast. There are various brands available. I prefer to buy Quaker which is also easily available at your local super store.

Ingredients
  

  • 1 cup Rolled Oats Plain
  • 1 tbsp Semolina
  • 1/4 cup Yogurt
  • 1 cup Water
  • 2 NOS Chilles Finely Chopped
  • 1 tbsp Black Pepper Crushed
  • 1 tbsp Cilantro Chopped
  • 2 tbsp Onion Finely Chopped
  • 2 tbsp Carrot Garted
  • 1/2 tbsp Salt
  • 2 tbsp Olive Oil

Instructions
 

  • Dry roast oats over hot griddle
  • Cool the oats completely and blend to a fine powder without adding any water
  • Transfer the powdered oats into a large mixing bowl
  • Add 2 tbsp semolina, ¼ cup curd and 1 cup water
  • Whisk to make smooth batter
  • Add 2 tbsp onion, 2 tbsp carrots, cilantro and ½ tsp salt
  • Mix well forming thick cake batter consistency oats batter
  • Let it rest for 10 minutes.
  • Pour a ladle full of batter onto a hot griddle and spread gently.
  • Pour ½ tsp of olive oil over pancake.
  • Allow cooking on a medium flame for a minute
  • Now flip the pancake and cook both sides pressing gently
  • Oats veggie pancake is ready to serve with yogurt or mint and coriander dip
